it’s kind of hard to believe but halloween is just around the corner and i can definitely feel autumn in the air — a very nice time of year to do a little baking. i’ve partnered with Land O’Lakes to bake up some halloween goodness for my friends this year and thought it would be fun to surprise them with a gift package of my favorite cookies. this is my grandmother’s recipe for shortbread cookies and i always make them at christmas, but i thought i’d give them a trick or treat twist this time and add some edible googly eyes! they’re really simple to make, with just a few key ingredients and you can make the dough in advance and refrigerate it overnight or even for a few days. the key is the butter and when you taste them you’ll know why — they seriously melt in your mouth. you can add googly eyes, or for everyday cookies, add little chocolate bits sprinkled with sea salt — so delicious!
